However most 3.5" tft touch screens should work for this. The pins shown on the back of the adafruit screen simply give you access to the raspberry pi pins which are covered by the screen connector.  If you use a 3.5" tft without those pins you can connect directly to the corresponding raspberry pi pins instead. You may have to do a little soldering to get access to the pins as the screen connector will cover all the pins on the raspberry pi. The main connector should be the same pinout on all these displays, but you can simply update the pinouts in software if you happen to have one that is different.
